It's time to bake again!  We made Maple bread, peperoni rolls and Lemon Blueberry mini loafs!
I am going to give you the recipe for the Lemon Blueberry loaf. 
 And here we go!

Lemon Blueberry Bread Recipe:

1 1/2 cups (195 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons (85 grams) unsalted butter, room temperature
3/4 cup (150 grams) granulated white sugar
2 large eggs
1/2 teaspoon pure vanilla extract
1 tablespoon grated lemon zest (outer yellow skin of the lemon)
1/2 cup (120 ml) milk
1 cup fresh blueberries

I added all the drys together in one bowl.
In my awesome mixer I creamed the room temperature butter. Add the sugar and mix till a light fluffy texture.
 Mix in the vanilla and lemon zest. Slowly add 1/3 of the dry ingredients to the mix, and when it gets thicker then and 1/3 of the milk, do this till its all gone.
Then stop  and mix the rest by hand, so not to over mix the batter. Dust your blueberries with flower.


Fold the blueberries into the batter.
Then pour the batter into prepared loaf pans. ( I am using 3 mini pans )  Bake at 350 F for about 20 mins.
Tada! yummy yummy yummy!

Good morning pancakes!  Mom had surgery on Monday, thankfully all went well and she is starting therapy. Dad is staying with her till the end of the week.  Roland and I have been running around doing paper work.  Today is baking day, and as such I made pancakes! Roland like pancakes with sugar and lemon.  I added some blueberries and vanilla. Yum yum! Now let's bake!

Today we had a sudden realization.
We drove my sister to work, and just didn't feel like going home.
We drove out to Staunton River State Park, and checked out the changes since the tornado.
We stopped at a driving range, and had lunch at the cute little diner.
It was a lovely afternoon to eat out side. The Diner was cute and the cook was also the waitress and the cashier. There were a few locals, that seemed to be other family members.
They had some really pretty roses growing against their fence.
I thought they added charm to the place.
Bird houses were everywhere!
The owners cute little puppies ran over to see us!
They were so small, and waddled everywhere. This little girl puppy came over and immediately rolled over on to her back for cuddles.
I ordered a grilled cheese.
Roland got a burger, of course.
We left, and started slowly to make our way back to Vickie's work.  We would drive and then slow down so I could take pictures of things like this.
And this.
Just old buildings that have seen better times.  I still think they are beautiful.
I can just imagine what they looked like when they were new. When the roof wasn't rusted. A time when the siding was painted white, the lawn kept with flowers on either side of the walk way.  This place was someone's home.  It held their hopes and dreams saw children grow up, saw loved ones die. I love old houses.
We realized, today we were Sunday drivers!  It was fun, and I enjoyed spending the time with my husband, that wasn't in front of a TV or computer. It was a lazy summer Sunday, and It was wonderful.

So I am in love with black eyed Susans lately!  They are everywhere even mom has some growing next to her building in the back yard! I liked the way they looked this morning and Roland has found a new pet!
He found this beast hanging on the screen of our storm door. The cats were endlessly interested in it so much so that Roland found his curiosity piqued. He held it captive one night, to show my mom in the morning.  My mother on the other hand has had met with such a beast in the past.  She remembers playing in her front yard as a young child before she was 5 years old. Sitting  enjoying the day and then suddenly she became the victim of a random attack! A bug just like this one had locked its large mandibles to pinch her bottom!  Showing her this  bug brought all those feelings back. She even glared at it.  It now lives in her garden making amends for its ancestor's actions.
I started watering the garden and it was so quaint and so lovely I had to take some pictures.
They are sunshine in plant form!

Roland and I have been up to our eyeballs in paper work and more red tape than ever!  For those of you who don't know, Roland and I are working on moving to Korea.  I am getting a teaching job there while we work on his Visa for the USA.

  I have to get all my papers together for my school, I am trying to get his dependent  visa for Korea as well. This is my number one priority right now, but I keep getting ahead of my self and that is just not being helpful.  I am always excited to jump into the deepest darkest side of the pool, Roland is feeding off my excitement and we are just ready to go!  But that is why I haven't been so prompt on my blog. I really really miss it!  We are considering a lawyer to help with our US Visa, just to take some stress off my shoulders.  But when ever I get stressed, I think of the amazing things we will experience and learn in the coming year!

This week I traveled to Huntington to celebrate my birthday with friends!  It was also to celebrate my friend Kenzi's Birthday.  Her birthday is on the 7th and mine is on the 9th. I am a year older, so we celebrated on the one day a year that we are the same age. It was  truely a love time to spend with her friends and family!
I brought Earl Grey cupcakes, and Chicken curry sandwiches.  
It was just a wonderful time. My friend Gael looked super cute!
Kenzi and I received a joint gift from my mom.
Oh my goodness it's on! We stayed late, and really just enjoined each others company. It was so nice.

I sold my first thing today! I am so excited to mail it out on Tuesday. This beautiful  glass bowl is going to be for someones wedding.  I am sure they will treasure it.
